The sous vide (pronounced "soo-veed") technique, the secret of great chefs worldwide for decades, involves cooking food in vacuum-sealed pouches submerged in a precisely-controlled water bath held at a constant temperature.

Great item and never have to worry about undercooked or overcooked meat. Tried it and with no prior experience, cooked a delicious meal with my wife's approval (very difficult task to accomplish).

I'm a total convert to the sous vide system of cooking. I use mine almost every day for proteins, root vegetables, apples, rhubarb, and soon eggs. I'm an early adopter, but someday this will be as widespread as a microwave. But with much better tasting results. And SousVide Supreme is a good company to deal with.

My cooking career began when I attempted to cook fall-off-the-bone St Louis style ribs without parboiling. My success came two years later with a labor-intensive combination of brining and smoking. The sous vide made all that unnecessary and helped me to produce what my guests call the "best ribs I've ever tasted." The combination of cost savings (less expensive cuts of meat are made premium by the sous vide) and time savings (set it and forget it) make the sous vide my preferred method of cooking just about everything. Now they just need to make a bigger one!
