Unlike the single point heating systems of immersion circulators, SousVide Supreme's patented design and precision temperature control technology ensures even temperatures without the need for a circulator motor. As heat rises from the edge-to-edge heating plate in the base, it creates highly efficient thermal convection which maintains consistent temperatures throughout the water bath without the need for agitation. The SousVide Supreme water oven also features cool touch housing with its double-wall insulated design, ensuring maximum heating efficiency and energy savings. Additional features include silent operation and a stainless steel lid that contains steam and helps prevent evaporation of water during cooking.     We have owned the full size Sous Vide Supreme for a number of years. We saw it reviewed in America's Test Kitchen and gambled on it. We had never cooked Sous Vide before. We love the machine. The first one had a leaky seal. My wife phoned and the company immediately mentioned that one shipment had had that problem and they promptly replaced the machine. It has worked beautifully since. We loved the way they handled it. We loved the company so much we bought their vacuum chamber. It worked beautifully and has run very well since. I accidently broke the top of the chamber and it had a small crack. It worked, but did the vacuum was not as strong. I told the company about it, and within a couple of days I had a new lid and easy instructions to effect the repair. It was so easy a child could do it! Again, loved the company and the product. I just bought a demi at Costco for the lake. I am not sure it will meet our needs as it might be too small.

    I bought this expensive toy to play with it and then return it. After my first use cooking a chuck steak rare and cutting it with a table fork I had to keep it. I've never seen (or tasted) anything like it. Thanks Sousvide!

    I was in 2 minds whether to buy a water bath, but since I took the leap and bought one I have not looked back! It not only makes my entertaining impressive but so much easier, all prep is done in advance and then just left to do its own thing while I'm able to have a drink with my guests when they arrive instead of being manic it the kitchen! Highly recommended!

    I have use this to cook the leaner grass-fed beef, also pork and chicken. Everything turned out tender, flavorful and succulent - even beef cheeks! Most recently I cooked salmon fillets - my quiet husband pronounced "This is the way to cook salmon!" I simply salted the skinned salmon, added a pat of butter, sealed them in pouches, cooked at 140 degrees for 40 minutes, and served them without searing or sauce. Amazingly tender and moist! I have rendered lard, cooked eggs and potatoes (adding a touch of dill weed to the uncooked potatoes) for wonderfully flavorful potato salad. This amazing machine has opened a whole new cooking and eating experience for our family! Thank you, Sous Vide!

    This is really an amazing device, let me tell you that. It is absurdly simple to use, holds a lot of food, has a surprisingly small footprint, and makes delicious easy meals. There is a lot to love here. I have had a very easy time using it. Filling it with water and dumping out the used water has been easy with the offset handles. Setting the temperature and time is also a breeze. It heats up the water amazingly fast, usually it only takes about 15 or so minutes to heat up a large amount of water for a meal. It holds so much food, I have been cooking 2 chickens at the same time about every week, and it handles it so well. I have had no problems with uneven cooking anywhere in the machine, whether I am cooking steaks, fish, or eggs. There are a few improvements that could be made for the next version. The biggest complaint I see is that the lid feels and is cheap, it doesn't match the rest of the device at all in quality. It is flimsy flexible metal and the only insulation is a giant m

    I sold my brand new Sansaire in order to buy this one when it went on "Special". I didn't think I could afford one, but jumped at the opportunity. I am just so glad I did. I can do so much more with the SousVide Supreme. Dinners for two, four or six without even crowding. No worries about something being over or under cooked. Veggies, fruits, meat, fish all come out at the exact temp for serving. Gob-Smack perfect. When I first got my SousVideSupreme I bought two beautiful 2-inch thick Rib Eye steaks. Did them at 128 F for an hour, then seared hot and fast over charcoal. I have NEVER eaten a better tasting, juicy, tender lovely steak in my life! Whether cooked by me, someone else or in numerous restaurants that supposedly are professionals at serving "steak". Buttery smooth on the palate, lovely flavor, perfectly done and served at just the right temperature!! Carrots come out of the SousVide Supreme with all the sweetness and "tooth" that is usually lost.

    I loce, love, love my Sous Vide Supreme! I ate at The French Laundry once and the main course was a steak that was so incredibly tender and flavourful that I had to find out how it had been cooked; in a waterbath of course and then lightly seared. My husband bought me the Supreme for my birthday and he calls it the gift that keeps on giving (back to him of course!). One of my favourite things is to cook a whole smoked ham for 36+ hours at 60 degrees Celcius. It comes out of the water oven having cooked in its own juices (use these for a soup) and eat the ham as you wish. I quite often make a terrine with the ham, flaked, parsley mixed into the juice from the ham itself, perhaps some asparagus through the middle of it - or roasted peppers for beautiful colour - and the juice jellifies when you cool the terrine down. Amazing dinner party first course!
