Unlike the single point heating systems of immersion circulators, SousVide Supreme's patented design and precision temperature control technology ensures even temperatures without the need for a circulator motor. As heat rises from the edge-to-edge heating plate in the base, it creates highly efficient thermal convection which maintains consistent temperatures throughout the water bath without the need for agitation. The SousVide Supreme water oven also features cool touch housing with its double-wall insulated design, ensuring maximum heating efficiency and energy savings. If consistency is the goal of the professional kitchen, it is the bane of the home cook. That is, before the arrival of SousVide Supreme Demi. I get remarkably consistent and delicious results every time. I can hardly cook chicken breasts any other way than sousviding them for fear that they will be dry. I started revising recipes so that I SousVide the meat and add it to a sauce made separately, such as a recent chicken fricassee with morel mushrooms and thyme. The SousVide Supreme Demi has become the most used appliance in my kitchen.

First off, I've been cooking in professional kitchens for ten years, and I am skeptical of new methods. I familiarized myself with sous vide cooking at a restaurant I was working at and realized I'd love to us those techniques at home. Since buying my Sous Vide Demi I've found more uses than I could have ever imagined. Wether I'm doing the most tender baby-back ribs or a wildly decadent and almost too simple tres leches the results are always amazing. I've even made Risotto in the thing! I purchased mine a year ago and use it regularly and it's still going strong. After restaurants I became a personal chef. I've since talked clients into purchasing one for themselves and created new SVS believers. Now, as I open a new food truck I plan on bringing the SVS on board and slingin' sous vide items to the masses! Do yourself a solid and purchase one today.

The SousVide Supreme delivers the best meat you will ever eat. Period. I purchased $40 worth of beef tenderloin for a small dinner party; I vacuum sealed the tenderloin in the pouch with no added seasonings. It then went into the SousVide Supreme to cook, and hold while we visited with our guests. At dinner time I opened the pouch and seared the beef tenderloin in a hot fry pan and then cut the tenderloin into 4 - 8 oz. portions. The beef was absolutely the best beef I have ever eaten. Ever. Succulent and moist; cooked perfectly. Since then I have cooked fish in it as well as boneless chicken breasts. Perfect every time. The SousVide Supreme Demi is my number 1 choice for cooking any type of meat.

I had just bought an Anova immersion circulator, but when I was offered a chance to buy a SVS at a substantial discount (through a limited-time arrangement with a Modernist Cuisine website), I decided to get one anyway, and boy am I glad I did! The size is perfect for daily use, when I'm just cooking for a couple people, and it's nice to have the versatility that having a second sous vide option offers when doing a more extensive dinner party. I love my SVS, and I couldn't live without it.

For the home chef this offers so many advantages. The first essential is a vacuum packer, this on it's own justifies the expense through vastly improved food storage options. The Water Bath and Sous Vide technique ensure consistent results once you find recopies that are to your liking. The ability to cook extra portions, rapid chill and freeze ensures that you can have sufficient stock that you will never face a boring meal again. The ability to use the less expensive but generally more flavoursome cuts of meat with mouthwatering results repays the investment over time. The Sous Vide Demi is compact enough to live in a cupboard when not in use though ours does not spend much time there.

After reading about sous vide cooking and the Sous Vide Supreme products for several years my wife and I finally took the plunge and bought the SVS Demi - Black. We were expecting great food from the machine and it certainly delivered, above and beyond expectations. But what really surprised us was how much it has simplified after dinner clean-up. Since we both work and have a small child, this is huge and we cannot recommend SVS water baths enough.

My cooking career began when I attempted to cook fall-off-the-bone St Louis style ribs without parboiling. My success came two years later with a labor-intensive combination of brining and smoking. The sous vide made all that unnecessary and helped me to produce what my guests call the "best ribs I've ever tasted." The combination of cost savings (less expensive cuts of meat are made premium by the sous vide) and time savings (set it and forget it) make the sous vide my preferred method of cooking just about everything. Now they just need to make a bigger one!
